A Taste of the Fall Harvest and Natural Wines

Fall is almost here, and we here at PRINT are excited to try new harvest flavors in the kitchen. Forager Meghan Boledovich has been hard at work searching for the best tastes of the season for Executive Chef Charles Rodriguez and Pastry Chef Amy Hess. We’re also intrigued by the natural wines we’ve come across. A natural wine is a wine made without chemical intervention, and very little mechanical intervention. They can be both organic and biodynamic, and they are generally unfiltered.

To share these flavors with our PRINT guests, we are presenting a special Fall Harvest Tasting and Natural Wine Pairing at Tuesday, Wednesday, and Thursday dinner services. We’ll begin offering the menus on Wednesday, September 13th, and end on Thursday, October 12th.

Fall Harvest Tasting Menu – $80

First

Heirloom shelling bean hummus, blistered tomatoes, pistachios, rooftop mint, grilled flatbread

Second

Open-faced lobster ravioli, corn brodo, chanterelles, summer savory

Third

Vermont lamb mixed grill, charred eggplant, shishito peppers, sweet potato crisps, salsa verde

Dessert

Buffalo milk gelato, poached husk cherries, hazelnut florentine

Pollenbert – goat camembert infused with fennel pollen – RG Cheesemakers, Saratoga, NY

Natural Wine Pairing – $40

First

Aperitif – The Crush – muddled grapes, vermouth, sparkling rosé

Second

Chenin Blanc. Domaine Clement Baraut. Savennieres. Loire Valley. 2013. Unfiltered. Biodynamic.

Third

Moreto. Piteira. Alentejo. Portugal. 2014. Clay jar amphora fermentation and maturation. Biodynamic.

Dessert

Barrel-Aged Mead. Cuvee di Diable. Montreal.
